Quinoa Salad
INGREDIENTS
salad mix (lettuce, tomatoes)
sliced cucumber
cooked quinoa
pumpkin seeds
avocado (optional)
red bell pepper
roasted or sautéed vegetable
(brussel sprouts, zucchini, cauliflower or broccoli)
2 tbs of tahini
1 tbs of lemon juice, vinegar or water to thin
diced dill or cilantroDIRECTIONS
Cook quinoa according to package directions (takes about 10-15 min) mean while chop veggies, measure according to the number of people you are preparing for. If you don’t want to take the time to roast the veggie of you choice you can steam briefly in a pot to make them more tender then saute with vegan butter for richer taste and texture. When quinoa is done transfer to a bowl to cool slighty then add to salad.
To make dressing combine tahini, lemon juice and oregano if using and mix well. Pour over salad and top with pumpkin seeds.
